If you didn’t already know, I like to keep things simple! It’s too easy to complicate life so I am very intentional about simplifying whenever I can.
Whether it be my life in a grander sense or something as small as cooking over a campfire – I like to take a simplistic approach.
So, when my friend Marvin (yes, that is her camp nickname) made Blueberry Dump Cake for us one evening I asked if she would tell me her secret recipe.
I was expecting something complex but ended up being surprised by what she told me.
It turns out, her recipe is super simple and yields maximum deliciousness.
1.Start a campfire! While you’re waiting for it to die down to coals, start prepping the Dutch Oven.
2. Line the bottom of your Dutch Oven with a thick layer of blueberries. I’m using frozen blueberries because that’s what I had in my freezer. However, you can also use blueberry pie filling, which would keep better than frozen blueberries when you’re out in the woods.
3. Pour about a half cup of sugar over the blueberries, or enough to evenly coat them.
4. Dump an entire box of cake mix over the layer of blueberries and sugar. (see where it gets the name “dump cake”)
5. Using a knife, fork, skewer, or whatever you have handy, poke a handful of holes through the layers. This will allow the butter we’re about to put on top to soak through to the berries.
6. Using that same knife, fork, or skewer, cut up the butter and placed it over the layer of cake mix. You could melt the butter and then pour it on top but, hey, we’re trying to keep it simple.
7. If you don’t have a nice bed of coals by the time you’re done prepping, sit tight for a few more minutes. When ready, cover your creation and put it in the bed of coals. To cook evenly, place some coals on top of the oven if you can safely do so!
8. After 25 minutes or so, Voilà! Carefully remove the oven from the coals and let cool a bit before you dig in.
While not the healthiest for your body, this dessert offers maximum health for your soul while easing the campfire cooking process for those who want a simple recipe.
